CHEESE
The methods we use to make
our cheeses have hardly changed from those used by traditional
cheesemakers for hundreds of years.
Fresh pasteurised milk
is poured carefully into the cheese vat. The milk is gently
warmed, stirred and turned into “curds and whey”.
The set curd is placed in the cheese moulds and left to
drain.
After salting the cheeses
are ripened for up to five weeks, during which time a
distinctive soft white coat forms over the whole cheese
covering and protecting the rich creamy interior.

Goldilocks
Goldilocks is a soft cheese,
ripened in the traditional way by the action of the soft
white mould which covers the mature cheese. The interior
is a bright golden colour with a soft creamy texture.
The taste is full and rich, similar to but stronger than
brie, with subtle depths and flavours. As the cheese ripens
the colour deepens, the flavour becomes stronger and the
cheese begins to "run" like thick Jersey cream.
GOLDILOCKS Linosyris vulgaris.

A graceful unbranched
hairless perennial, 6-12 in high with many 1-veined, pale
green linear leaves. Flower-heads bright golden-yellow,
unrayed, egg-shaped, with prominent yellow styles and
stigmas, in a loose erect terminal umbrel.
Habitat: Very rare,
on five dry limestone cliffs along the W coast of England
and Wales.
Flowering: September - October.
Indian Blanket
Indian Blanket is simply
a young Goldilocks which has been lightly smoked over
untreated oak chips thus producing an unusual and definitely
moreish cheese.

(or Firewheel) Gaillardia Pulchella.

A short-lived perennial
or annual noted for its brilliant, showy daisy-like flowers.
The large centres of the flowers are rose-purple, the
dense, frilly petals yellow, orange, crimson or copper
scarlet. Flower-heads are 2-3 inches across held on 18-36
inch light open stems.
Habitat: Frequent
along roadsides in N. America from Virginia to Florida
and westward to Colorado and New Mexico extending south
into Mexico.
Flowering: Throughout
the summer.
Black-eyed Susan
Black-eyed Susan is created
by taking a young Goldilocks cheese and rolling it in
black peppercorns. The peppercorns have first been carefully
crushed by hand to allow sufficient "bite" to
remain. The crunchy texture and spicy taste of the peppercorns
contrast wonderfully with the smoothness and creaminess
of the cheese.

BLACK EYED SUSAN Rudbeckia
hirta

The state flower of
Maryland. A stiff upright annual or short lived perennial,
2-3ft high. Flower-head 2-3in diam. The characteristic
dark-brown, spherical centre is surrounded by bright yeloow
ray florets.
Habitat: Fields and
roadsides throughout North America east of the Rocky Mountains.
Flowering: May - August.

Viper's Grass
Viper’s Grass is a soft cheese flavoured throughout with garlic, and with chopped chives distributed inside and coated over the outside, giving a delicious taste as well as a pleasing appearance.

Viper’s Grass Scorzonera humilis

A yellow-flowered plant 15” tall. Leaves all basal, lanceolate to narrowly lanceolate with entire margins, narrowing towards the base. Flowers only with ray florets. Involucral scales in many rows. Fruits with pappus. Distribution Europe, rarer towards the N and S. very rare in England.
Habitat: Boggy meadows and poor grassland
Flowering: May - June
